The blade of this vegetable Nakiri is knife is made of 80 layered Damascus steel. It is formed by forge welding contrasting layers - in this case 1095 & 15N20 steels - together under immense pressure and heat, into one homogeneous billet. As this billet is cut, stacked, and forge welded again, the layer count multiplies. When the blade is ground, the different layers are revealed, with each distortion in the pattern representing a different blow of the hammer during forging.
The faces of the blade have been polished from edge to spine to reveal the pattern in its entirety, with the full tang tapering out towards the butt of the handle, not only for balance, but also mirroring the distal taper of the blade.
The handle is made of stabilised turf from Co. Kerry, with green Atlantic Ocean plastic liners from Farrihy Bay in Co. Clare, brass bolts, and sterling silver pins. It is faceted, filling palm of your hand nicely, and swelling laterally towards the butt for balance and aesthetics.
The blade is ground very thin, specifically for slicing vegetables - but with that said, we use a Nakiri for almost everything at home!
Length of cutting edge: 145mm
Overall length: 285mm
Weight: 146g
Balance point: Where the handle meets the blade.
