The blade of this vegetable Nakiri is knife is made of 80 layered Damascus steel. It is formed by forge welding contrasting layers - in this case 1095 & 15N20 steels - together under immense pressure and heat, into one homogeneous billet. As this billet is cut, stacked, and forge welded again, the layer count multiplies. When the blade is ground, the different layers are revealed, with each distortion in the pattern representing a different blow of the hammer during forging.
The faces of the blade have been polished from edge to spine to reveal the pattern in its entirety, with the full tang tapering out towards the butt of the handle, not only for balance, but also mirroring the distal taper of the blade.
There is a micro-chamfer running between the tand and the handle scales, which are made of my last piece of Pear from our garden, with blue fibre liners, brass bolts, and sterling silver pins. The handle is faceted, filling the palm of your hand nicely, and swelling laterally towards the butt for balance and aesthetics.
The blade is ground very thin, specifically for slicing vegetables.
Length of cutting edge: 145mm
Overall length: 280mm
Weight: 134g
Balance point: 5mm above the highest brass bolt.
