The blade of this Santoku knife is O1 high carbon steel. It is flatter toward the heel, with a gentle curve up towards a fine tip, making it ideal for all types of cutting, particularly up-and-down cuts. Both the spine and the choil are rounded for comfort in use.

The handle is made of wind felled Beech from Co. Carlow, American Walnut, blue Ocean plastic from Coumeenoole Beach in Co. Kerry, sterling silver, and brass. It is an octagonal design, tapering outwards towards the butt for balance.

This knife is a kitchen all-rounder.
