High carbon Gyuto with Oak, Beech & Blue Ocean plastic handle.

€390.00

The blade of this Gyuto is made of O1 high carbon steel. The blade is flatter towards the heel, with a gentle curve leading up to a fine tip for delicate work, making this knife particularly ideal for slicing. Both the spine and the choil are rounded for comfort in use.

The handle is made of wind felled Oak from Co. Carlow, spalted Beech, blue Ocean plastic from Farrihy Bay in Co. Clare, sterling silver, and brass. It is an octagonal design, tapering outwards towards the butt for balance.

Length of cutting edge: 210mm

Overall length: 360mm

Balance point: At the makers mark.

It is important to mention that carbon steel blades require a little more care and maintenance than stainless steel, but you will be rewarded with a rich patina that will illustrate the knife’s history with you over a lifetime of use. Each knife comes with instructions on how to look after it.
